Ingredients:
4 skinless, boneless chicken thighs.
4 cloves garlic (minced)
Juice of 1 lemon
2 tablespoons olive oil
Herbs (such as thyme or rosemary)

Instructions:
Heat your oven to 400degF (200degC).
Garlic, lemon juice, olive oil and herbs should be mixed together in a bowl.
Dust the chicken with salt and pepper and then add in the marinade.
Put the chicken in a baking dish and bake it in the oven for between 25-30 minutes.
Ingredients:
1 pound of beef (sirloin or flank) sliced.
2 cups assorted bell pepper (sliced)
1 cup broccoli florets
3 tablespoons soy sauce
1 tablespoon ginger (grated)
2 tablespoons vegetable oil
Instructions:
Heat a large pan / wok over high heat with oil.
Add the beef and put on until brown, 3-4 minutes.
Add the vegetables and fry them further by 5-7 minutes.
Add ginger and soy sauce and mix thoroughly. Serve hot.
Ingredients:
8 ounces pasta (penne or spaghetti)
1 can (14 ounces) crushed tomatoes
1 cup heavy cream
Basil leaves (handful, chopped fresh)
2 cloves garlic (minced)
Salt and pepper to taste
Granted Parmesan cheese (to serve)
Instructions:
Prepare pasta as packeted.
Saute some garlic on a small amount of olive oil in a different pan and add crushed tomatoes and cream.
Add basil, and season with salt and pepper. Simmer for 5 minutes.
Pasta Drain and mix with the sauce. Serve with Parmesan on top.
4. Sheet Pan Shrimp Tacos.
Ingredients:
1 pound shrimp (peaked and minced)
2 tablespoons taco seasoning
8 small corn tortillas
1 cup cabbage slaw
Lime wedges (for serving)
Instructions:
Preheat the oven to 425degF (220degC).
Combine taco seasoning and shrimp and spread onto a sheet pan.
Bake for 8-10 minutes or until shrimp are cooked.
Add in tortillas with cabbage slaw and lime squeezer..
Ingredients:
3 cups cooked rice (day-old rice preferably)
1 cup mixed frozen vegetables
2 eggs (beaten)
3 tablespoons soy sauce
2 green onions (sliced)
2 tablespoons vegetable oil
Instructions:
Heat oil in a large skillet. Stir the eggs and put aside.
Add vegetables of your choice (frozen) to the skillet and cook out.
Add soy sauce and cooked rice and mix it. Add the green onions and scrambled eggs. Cook for another 2-3 minutes.
Ingredients:
1 pound chicken breast (cubed)
8 ounces fettuccine
2 cups chicken broth
1 cup heavy cream
1 cup grated Parmesan cheese
Salt and pepper to taste
Instructions:
Combine chicken, fettuccine, chicken broth and heavy cream in a large pot.
Boil, then turn heat down and cook pasta and sauce approximately 15-20 minutes or until pasta is cooked and sauce turns creamy.
Add Parmesan cheese, salt and pepper and serve.
Ingredients:
1 pound ground beef or turkey
1 packet taco seasoning
4 cups of romaine lettuce (diced)
1 cup cherry tomatoes (halved)
1 cup shredded cheese
Tortilla chips (for topping)
Instructions:
Brown the ground meat in a skillet, and then using package directions, add taco seasoning and water.
Lettuce, tomatoes and cooked meat should be combined in a big bowl.
Tortilla chips and cheese should be added before serving.
Ingredients:
4 cups vegetable broth
2 cups of mixed vegetables (frozen or fresh)
1 can (14 ounces) diced tomatoes
1 Tablespoon Italian seasoning.
Salt and pepper to taste
Instructions:
Bring vegetable broth to a simmer in a massy pot.
Add tomatoes, mixed vegetables, and Italian season.
Cook for 15-20 minutes, sprinkle with salt and pepper and serve.
Ingredients:
4 chicken breasts
1 cup pesto sauce
1 cup cherry tomatoes (halved)
1 cup mozzarella cheese (shredded)
Instructions:
Preheat the oven to 375degF (190degC).
Sprinkle pesto in a baking dish on the chicken breasts. Cheese and cherry tomatoes on the top.
Bake it 25-30 minutes till the chicken is cooked.
Ingredients:
1 cup quinoa (rinsed)
2 cups vegetable stock or water.
1 cup chickpea (canned, rinsed)
1 cucumber (diced)
1 cup cherry tomatoes (halved)
Lemon vinaigrette (to dress on)
Instructions:
Bake quinoa in vegetable broth or water as indicated on the package.
When it is chilled, combine quinoa and chickpeas, cucumber, and tomatoes.
Serve with lemon vinaigrette drizzled over and serve chilled or at room temperature.
